Luajit2 works properly on ppc64le and there has been a patch merged in the OpenResty repo to skip the 2 tests: https://github.com/openresty/luajit2-test-suite/pull/20 Once there is a new release of OpenResty, the luajit2 apk build should work properly on ppc64le as-is, and the 2 tests should not need to be skipped in the APKBUILD.
